Mexican food is clearly one of our favorite styles, both the traditional dishes as well as the fusion meals from the Tex-Mex kitchen. Base line is that you can fill tortillas with nearly anything and just pretend. With the help of salsa or some pico de gallo anything can taste good, they kinda play in the same league as Sriracha sauce.
One option we learned to enjoy is the breakfast quesadilla which elaborates on the regular quesadilla by adding some additional ingredients into the cheese core of goodness. You have a wide variety of possibilities but we love to go with what you find in the recipe below.
Breakfast QuesadillaPrint This
- 8 flour tortillas
- Mozzarella or cheddar
- Sweet corn
- 1 avocado
- 4 eggs
Bake the eggs at 200°C in small muffin tins to keep them compact.
Put avocado slices, a bit of sweet corn, one of the baked eggs and a bit of cilantro on a tortilla. Cover it with shredded cheese and put another tortilla on top.
Preheat a pan at medium heat and cook the quesadilla lightly from both sides to melt the cheese.
Serve them while still warm and add pico de gallo, guacamole, salsa roja or crème fraîche.
