One of the first things people learn about me after the fact that I love baileys and the color orange is that I am obsessed with seafood. I am not a huge fan of meat or chicken (I rarely eat them) but fish is my best friend, I could and actually do eat some form of fish or seafood everyday.
One of my favorite ways to cook fish is to bake it in the oven. I am also one of the rare people who likes their fish whole meaning with bones and head attached , this must be the Ghanaian in me. Below you will find the recipe to one of my favorite baked fish meals. It is rather simple recipe and can be eaten with any side dish you can think of or alone . I normally have it with a side of herb couscous or baked sweet potato wedges.

- 1 whole red fish ( or any fish of your choice really), cleaned
- 3 tablespoons fresh garlic
- 1 sprig of green onion, finely diced
- Fresh cilantro and parsley roughly chopped
- 2 tablespoons canola oil
- 1 tablespoon of water
- 1/2 teaspoon of sea salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon red pepper flakes
Preheat your oven to 200°C.
Take out the cleaned fish, wipe it down to make sure there are no forgotten scales on it.
Mix the oil, sea salt, white pepper, black pepper, water, paprika, cumin, onion powder and red pepper flakes with the fresh garlic in a bowl till it forms a smooth paste.
Rub the fish down with the paste and put on parchment paper with the ends of the paper folded up to create a border for the fish to stay in.
Put fish in the oven for 20 minutes.
When the fish is ready garnish with the finely diced spring onion and the cilantro and parsley.
This meal is a simple and healthy one that anyone can do in less than half an hour. Its quick, easy and delicious and hopefully brings out the fish lover in you.
