So you’re having a nice dinner coming up and are still at a loss how to kick it off?
Opt for a nice carpaccio made from fresh scallops. Really fresh scallops. The freshest scallops you can get (Sorry, does it shine through I had seafood poisoning a month ago?). It’s a light course that will give great flavors without filling your guests up too much right off the bat.
Scallop CarpaccioPrint This
- 4 big scallops
- 1 mint sprig
- Fresh chili
- 1 lime
- 1 passion fruit
- Sea salt for seasoning
Dry the scallops with kitchen paper and slice them thinly with a sharp knife. Arrange them nicely on a plate.
Scoop the passion fruits out and mix with the juice of the freshly squeezed limes. Drizzle the mixture over the scallops.
Cut up the mint leaves and chilis into thin slices. Distribute them evenly over the scallops. Depending on the capabilities of your guests, you can also skip the chilis or replace them with some dried crushed chili.
Season to taste with crushed sea salt, serve and enjoy!
