Did you see the recipe on our website for the Sunday’s Rhubarb cocktail? Wondering if there’s a more reasonable way to use rhubarb than to turn it into syrup for drinks?
Sticking with our cake tradition here and facing the fact that rhubarb is getting into season, I’ve set out to bake a rhubarb cake with cinnamon crumble. It is actually very straight forward and I’m convinced this is a great, delicious project for your coming spring weekends!

- 1/2 cup unsalted butter at room temperature
- 3/4 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup sour cream
- 2 cups all purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 4 stalks of Rhubarb chopped into bite sized pieces
- 2/3 cup all purpose flour
- 2/3 cup white sugar
- 4 tbsp melted butter
- 1/2 tsp cinnamon
Preheat your oven to 180 degrees Celsius.
Add the room temperature butter to the sugar and mix them together until the mixture is smooth. I used a hand mixed but a standing mixer would be faster.
Then add the eggs (one at a time) followed by the vanilla and mix until smooth.
Add the milk and sour cream and beat into the mixture until all are combined and smooth. Feel free to scrape down the sides with a spatula.
In a separate bowl add the flour, the baking powder and the salt and mix these ingredients together.
Add the dry ingredients mixture to the wet one and mix slowly. Make sure the mixture is combined fully and try not to over mix the batter.
Grease the cake pan of your choosing with either with butter or oil and pour in the batter.
Spread the cut up Rhubarb on top of the batter.
Now to make the streusel topping, mix together the flour, sugar and cinnamon with the melted butter until the mixture is crumbly.
Generously sprinkle the streusel topping over the cake mixture and try to make it as even as possible if you can.
Now pop the cake into the oven for roughly 50 minutes at 180 degree Celsius until the streusel topping is evenly browned, the rhubarb bubbly and a toothpick inserted in the centre often cake comes out clean.
